Our Marina has a really nice garden and today Kurtis gave us a ton of vegetables.  They also have a couple dozen chickens so there is usually a couple dozen eggs available at the office.  It’s a good thing too because it was looking like Triscuits and cheese for dinner before Kurtis hooked us up.  The little yellow tomatoes are so sweet and good.  I think I ate about a dozen today.  With all the fresh veggies and eggs I decided to make Caprese salad and a frittata.  Rich also caught a little crappie so we added that to the mix.  The Caprese salad was easy enough – slice some tomatoes and fresh mozzarella, layer tomato with basil and the mozzarella, drizzle with a little olive oil and a dash of pepper.

For the frittata, first I sautéed the eggplant and zucchini.  Then I added the crappie and a clove of garlic.

Finally I added the eggs and cheese.  I cooked this on the stove top until it was set on the bottom but still loose on the top, then it went into the oven.

I was supposed to broil the top to finish cooking it, but I couldn’t get the broiler to light so I ended up just baking it at 375 degrees for about 10 minutes.  It turned out great!

Photos from a morning walk

I heard a big splash in the slough and saw this guy pop up out of the water.  He had a huge fish in his mouth!  The pictures aren’t great because it was still a little dark out and he kept diving back down into the water, but it looks like a big catfish to me.
